Meat Meets Salad

Meat or veg, indulgence or health, gut or heart, taste or diet. It’s always one or the other, isn’t it? Despite so many options available, we’re rarely convinced that we can have a healthy, tasty, meaty meal. Well, let’s see if we’re able to convince you this time.

Some of the best salads, with a healthy dose of meat.

1.Sesame Chicken Salad

Ingredients

1 chicken breast grilled

1 cup lettuce

1 tsp blanched almond slivers

1 tsp roasted sesame seeds

1/2 cup blanched asparagus

For the Dressing:

1 tsp extra virgin olive oil

1 tsp balsamic vinegar

1/2 tsp soya sauce

1/4 tsp chilly oil

For the Chilli Oil:

1/2 tsp of chilli powder – saute in oil and keep aside to cool

1 pinch brown sugar

Salt and pepper to taste

To Prepare

  1. In a mixing bowl, whisk all the ingredients for the dressing, until smooth.
  2. Cut the chicken in long strips.
  3. Toss the greens with almonds, sesame seeds, and half of the chicken.
  4. Top it with the rest of the chicken and asparagus.
  5. Dress it up with the dressing before serving.

2.Shrimp Rice Salad

Ingredients

455 gm cooked Shrimp (peeled & deveined)

2 cups cooked Rice

¼ cup Celery (thinly sliced)

¼ cup stuffed Olives (sliced)

¼ cup Green Pepper (chopped)

¼ cup Pimiento (chopped)

¼ cup Onion (minced)

Salt to taste

Pepper to taste

3 tbsp Mayonnaise

Lettuce

2 Tomatoes (cut into wedges)

Few Celery Leaves

French Dressing

To prepare

1.Take all the ingredients except lettuce, tomato and celery and mix in a bowl

2.Refrigerate

3.Pour over lettuce and decorate with tomato wedges celery

4.Serve with French dressing.

3.Lettuce and Egg Salad

Ingredients

8 Eggs (boiled, peeled and cut into squares)

Bunch of Iceberg lettuce

2 tbsp Salad Oil

6 tbsp Vinegar

1 tsp Mustard Powder

5-6 Black Peppercorns (crushed)

1/2 tsp White Pepper Powder

Salt to taste

To Prepare

1.Take the lettuce leaves, rinse well and dip in chilled water.

2.In a bowl, take the egg and torn lettuce leaves and gently toss them.

3.In another bowl, mix together salad sauce, vinegar, mustard powder, black peppercorns, white pepper powder and salt.

4.Mix the dressing well and add it to egg and lettuce mixture and toss gently till well coated.

5.Serve cold.

4.Tuna Macaroni Salad

Ingredients

1 Can white tuna in water, broken up

2 Ribs celery, sliced

1/2 Cup mayonnaise

3 Cups macaroni, cooked and chilled

1/2 tsp Dried thyme

1-1/2 Cups frozen peas and carrots

To Prepare

1.In a large bowl, mix tarragon and mayonnaise.

2.Mix celery, pasta and tuna and stir gently in peas and carrots mixture.

3.If desired, cover the serving plates with lettuce.

4.Now top with salad and serve.

5.Roast Chicken and Potato Mash Salad

Ingredients

For Roast Chicken:

1 whole chicken

1 bulb of onion

1 bulb of garlic

1 lemon with incisions on it

50 grams butter

6 sprigs of thyme

6 sprigs of rosemary

Salt and pepper

For Baste:

2 Tbsp olive oil

Salt and pepper

For Potato Mash:

4 potatoes

1/4 cup of milk

100 grams butter

Salt

Pepper

For Black Tomato Salad:

2 Tbsp of balsamic vinegar

5 Tbsp of olive oil

Small cubes of toasted bread

Tomatoes

Red onions

Garlic

Basil

To Prepare

For Roast Chicken:

1.Place the chicken on a baking tray.

2.Sprinkle some olive oil, salt, pepper and massage it.

3.In the cavity of chicken insert onion, thyme, rosemary and half a lemon.

4.Add garlic thyme and rosemary to the chicken.

5.Massage some butter all over the chicken.

6.Roast it into the oven for an hour and a half at 200 degree Celsius.

For Potato Mash

1.Put some parboiled potatoes in a tray and mash.

2.Add hot milk and cold butter to the mash.3.Stir continuously until frothy, and add salt and pepper.

For Black Tomato Salad

1.Into a bowl add balsamic vinegar, olive oil, bread cubes, tomatoes, onions, chopped garlic and basil leaves.

2.Toss all the ingredients together.

3.Add leftover chicken stalk while serving.

There. Five wholesome salad recipes with meat, seafood and even one with egg. Try these and then tell us salads aren’t tasty. Or health can’t be scrumptious!
